Food....

Food has become a good friend these days ;) I wanted to bake something but it had to be simple because our temporary home has the very basics for cooking utensils. So when I thought of angel food cake I thought perfect! Well I only had the trow away tin bread loaf pans and because they were smaller I had to make 3 of them. Well I think Mark ate one piece and since there is no one else here and we couldn't let any go to waste... well I ate the rest! MMMM it was soooo good! And have you ever had the angel food cake batter! OMG! It is the best... I am thinking of getting another box mix just to eat the batter... ok maybe not ;)

After I told my mother that I made this she reminded me that it is actually a talent to be able to make angel food cake. Last January my Uncle Andy decided to bake an angel food cake for my aunt for her birthday while she was at work. Well he forgot to cut the batter and it was ALL OVER the oven! So when he called my mom asking for help she pointed out that walmart had sugar free angel food cake already made. He did a little thud to the head and thought "why didn't I think of that!"

This just looked so delicious how could I not take a picture!

  1. Man Alive!!!! You mess up one cake and it haunts you the rest of your life, It's like a felony conviction... although that cake was a confection felony,

About Me

This blog started as a hobby for many reasons. It later became a way to keep the family up to date on our micro preemie baby, Ethan. Now as Ethan is nearing the 8 year mark with a little sister of 5 years I am finding a new reason to document on this blog.

Last year we were told by the school that Ethan had cerebral palsy, a blindspot and dyslexia. That is what started it all. I started taking him to doctors to find out what was going on and why this hasn't been discovered before now. In April 2017 we were told that he has executive functioning disorder. What the heck is EFD I thought?!?! After the doctor explaining it to us he basically said that if we don't start making changes now he could fall into the ADHD or possibly the autism category. Ok... so now what? What can we do?!? Well this blog is my way of documenting it all not only for me but also to help others find their way thru similar situations.
